Sweet Corn and White Bean Salad
This versatile, colorful, and nutritious Mediterranean inspired salad is perfect for Summer. The vinaigrette is key. Mix up the other ingredients depending on what you have on hand and what you have a hankering for. Get creative!
Serves 6
Ingredients:
1/4 cup chopped red onion
1 clove garlic minced
1/2 teaspoon grated lime zest
2 tablespoon lime juice
2 tablespoon olive oil
1 can cannellini beans (or White Navy, or Butter Beans)
1 cup cooked corn
1/4 cup of seeded chopped tomato
1/2 cup parsley
salt and pepper

Preparation:
Make the vinaigrette: mix the first five ingredients.
Add the beans, corn, tomato, and parsley and mix well.
Adjust the flavors to your taste as needed.
*Note: for an easy Latin American variation on this recipe substitute black beans for the cannellini; sub cilantro for the parsley; add a teaspoon (or more) of minced jalapeño.
